Gummy flavours and combinations are endless, so you really only need to know the ratio of gelatin to liquid, then you can start experimenting.
The basic ratio is 1 TBSP gelatin : 100ml liquid.
You can easily double or triple this to make more in one batch,
Try this out first, and if you prefer a softer gummy, then next time you can reduce the amount of gelatin slightly. A thicker liquid such as coconut milk will also create a softer gummy, as opposed to something like a fruit juice.
Lemon, Ginger & Honey Gummies
A great thing to have on hand for kids if they have a cold, but also delicious just any time. Gelatin is so nourishing for the gut, provides a mini hit of protein with every gummy and is lunch box friendly.
Ingredients:
100mL water
1 lemon
1 tsp raw honey
1 tbsp gelatin
Method:
Add the gelatin to the water into a saucepan and put on a low heat, Sir gently to help it dissolve. Squeeze the lemon in, and add lemon zest for more lemon taste, then add the honey. Stir again to help everything dissolve together.
Pour into moulds and store in the fridge.
Once they have set, store in an airtight container.
